Watervale Riesling

Prawns with Lime, Chilli and Coriander Recipe

"This dish works brilliantly with the Watervale. The sweet and sour edge in the dish blends well with the citrus nodes of the wine, while the chilli gives the dish that much needed lift."

Serves 4 | Prep time: 30 minutes | Cooking time: 5 minutes

1kg of  king prawns, peeled, deveined (tails left intact)

1/4 cup peanut oil

2 tbs of brown sugar

2 garlic cloves, finely chopped

2 limes, juiced and tsp of zest

1 1/2 cups coriander leaves

Ingredients

600g beef fillet

Dressing

1 lemongrass stalk, remove outer leaves and chop finely

1 long red chilli, deseeded and chopped

2 small green chillies, chopped

3 cloves garlic, chopped

1 tbs caster (superfine) sugar

2 tbs fish sauce

3 limes juiced

One of the earliest 2013 Rieslings to be released, the pure Riesling grape characters are captured in this bottle for your enjoyment.

Sight: 
This wine is bright straw yellow in appearance with green tints.
Smell: 
A fantastic lift of white peach, intense lemon citrus and jasmine, enhanced by hints of fresh nettles and spice.
Taste: 
The palate shows formidable lime, grapefruit and citrus elements with an overall generosity of fruit based sweetness, supported by a natural acid backbone.
Time: 
A wine created to be enjoyed upon release but also having the character to be cellared into the next decade.
